The beans are sourced directly from the Maranon project in north Peru, more about our visit to the project. This chocolate is made from the Peruvian nacional cacao, the Maranon project is working to ensure a fair deal for the growers, preserve this rare native cacao, and process (ferment & dry) it at the high standards required to make fine flavour chocolate.

peru-80 Using pure ingredients (cacao, cocoa butter and cane sugar) we have produced this chocolate from bean to bar. The beans are sourced directly from the Maranon project in north Peru, more about our visit to the project. With an 80% cacao content, this chocolate has a stronger character than the 70%, it’s one of our favourites. Bean to Bar : Madagascar UNROASTED 70% mixed strain

unroasted The beans are sourced directly from the farm in Madagascar. We have taken a bold step in producing a chocolate that is not roasted (usually termed raw). As well as preserving the naturally high nutritional values of the cacao, we have brought out a fantastic flavour in this bar. It is a light red colour, with grassy, green tea & banana leaf notes.

Bean to Bar : Madagascar 72% mixed strain

mad-72 This traditionally roasted and conched dark chocolate carries the pleasantly acidic, high fruity notes Madagascar’s cacao farms are renowned for. In this delicately produced bar we have used a fairly high percentage to reduce the sweeter notes and bring out some real depth. The beans are purchased directly from the farm in Madagascar, cutting our the middle men to provide the growers with a profitable margin.

Bean to Bar : Madagascar 72% orange & pink lake salt

SILVER in the 2013 International Chocolate Awards (European semi-final)

mad-os Our first flavoured bean to bar chocolate. Peruvian pink lake salt floods (causes saliva) in the mouth, creating a juicy sensation which compliments the flavours of the organic orange oil. We love this bar, finding that the orange works really well with the fruit notes in the Madagascar 72%. Simply delicious.

Coconut palm sugar is not the same as palm oil! There are over 1600 types of palm tree, for instance bananas and dates are both palms. Please be assured we would not use unsustainable palm oil in any of our products. By encouraging Indonesian farmers to grow coconut palms for sugar we are helping to counteract the serious environmental impact of palm oil. We are assured by our suppliers that the coconut sugar is harvested sustainably.
